For much of central North America, a heat wave has been lingering for a good portion of the week with temperatures hitting the upper 90's and triple digits in some areas. A wonderful way to cool off that is nutritious, too, is a refreshing bowl of gazpacho, a chilled soup native to Spain but popularized all over the world when the mercury heats up! Below is a recipe shared by contributor Nancy Marnett along with her daughter-in-law, Kirem Marnett.
